Ingredients:


340g green cabbage, thinly sliced


43g carrot, peeled and grated


30g red onion, thinly sliced


75g sugar


15g kosher salt


45g mayo


15ml apple cider vinegar


5g dijon mustard


2.5g sugar


1g black pepper


4g parsley, chopped
Directions:
Step 1: Prep vegetables
- Thinly slice 340g green cabbage.
- Peel and grate 43g carrot.
- Thinly slice 30g red onion.
- In a large mixing bowl, add veggies, 75g sugar, and 15g kosher salt and mix well. Let sit for 5-10 min.
- Rinse and dry the veggies, make sure to squeeze out some moisture, and let sit for step 2.
Step 2: Make dressing
- In a large mixing bowl, add 45g mayo, 15ml apple cider vinegar, 5g dijon mustard, 2.5g sugar, 1g black pepper, and 4g chopped parsley. Mix well.
Step 3: Combine
- In the same mixing bowl with the dressing, add in all the veggies and mix. Serve and enjoy!
