Ingredients:

Directions:
Step 1: Prep rotisserie chicken
- Shred rotisserie chicken (yielding 3 cups) in a bowl and set aside.
Step 2: Prep salad ingredients
- Thinly slice cabbage and carrots and set aside.
- Thinly slice ½ small red onion and set aside.
- Chop fresh coriander (yield 2 tbsp) and fresh mint (yield 2 tbsp) and set aside.
Step 3: Make salad dressing
- Slice 1 red chilli and set aside.
- Mince 1 clove of garlic and set aside.
- In a mixing bowl, add all salad dressing ingredients, mix well, and set aside.
Step 4: Make salad
- In a large bowl, add all salad ingredients, salad dressing and 2-3 tbsp olive oil, and toss together making sure everything is incorporated.
- Serve with roughly chopped roasted peanuts and lime wedges, and enjoy!
