Gỏi Gà (Vietnamese chicken salad)
The perfect salad for lunch, dinner, or a light snack. Super easy to prepare and it’s something I love to reach for whenever I need a quick, healthy meal.

Ingredients:
3 cups rotisserie chicken, shredded

2-3 tbsp olive oil

Directions:

Step 1: Prep rotisserie chicken

  1. Shred rotisserie chicken (yielding 3 cups) in a bowl and set aside.

Step 2: Prep salad ingredients

  1. Thinly slice cabbage and carrots and set aside.
  2. Thinly slice ½ small red onion and set aside.
  3. Chop fresh coriander (yield 2 tbsp) and fresh mint (yield 2 tbsp) and set aside.

Step 3: Make salad dressing

  1. Slice 1 red chilli and set aside.
  2. Mince 1 clove of garlic and set aside.
  3. In a mixing bowl, add all salad dressing ingredients, mix well, and set aside.

Step 4: Make salad

  1. In a large bowl, add all salad ingredients, salad dressing and 2-3 tbsp olive oil, and toss together making sure everything is incorporated.
  2. Serve with roughly chopped roasted peanuts and lime wedges, and enjoy!
