Beef and Broccoli
I got a new wok recently and I’ve been having a lot of fun with it. It’s so satisfying cooking dishes in a well seasoned wok and I know it’ll just get better over time. This is a classic Chinese-American dish that always had me wondering why it tastes so good in restaurants. Cooking this at home will never hit the same, but it’s fun to chase that level of perfection.

Ingredients:
1 tbsp oyster sauce

12 oz flank steak, sliced

1 stem of scallions, sliced

1 lbs broccoli

1 lbs broccoli

Directions:

Step 1: Prep Meat

  1. Slice 12 oz of flank steak into small bite-size pieces. Put it in a small metal bowl and set aside.
  2. Add all meat marinade ingredients into the same bowl with the meat.
  3. Massage marinade into the meat. Place in the fridge and leave to marinate for at least 30 min.

Step 2: Prep vegetables and aromatics

  1. Cut broccoli into florets, place in a large mixing bowl and set aside.
  2. Slice 1/2 medium sized carrot into planks, slice 1 stem of scallions, place in a small mixing bowl and set aside.
  3. Slice 1 small piece of ginger, finely dice 2 cloves of garlic, place in a separate small mixing bowl and set aside.

Step 3: Make sauce

  1. Combine all sauce ingredients in a small mixing bowl and set aside for the cook.

Step 4: Cook broccoli

  1. Boil water in a wok. Add a splash of oil, a pinch of salt, and the cut broccoli florets into boiling water and cook for about 2 minutes.
  2. Once cooked, drain water and place cooked broccoli in large mixing bowl and set aside.

Step 5: Cook Beef

  1. Add 1 tbsp oil to marinaded meat and mix, this will seal in the moisture in the meat.
  2. Heat wok on high until smoking hot. Add 1-2 tbsp of oil and swirl oil in wok to get it coated in the oil. Add marinaded meat into the wok. Sear and cook the beef for about 2 minutes or until mostly brown. Place beef in a large mixing bowl and set aside for the stir-fry.

Step 6: Stir-fry

  1. Clean then heat wok over medium-high heat until smoking hot. Add 1-2 tbsp of oil and swirl oil in wok. Add finely chopped garlic and sliced ginger in the wok and cook for about 1 minute or until fragrant. Add sliced carrots and sliced scallions into the wok and cook everything for about 1 minute. Add broccoli into the wok, mix and cook for about 1 minute.
  2. Add back the beef to the wok. Mix and cook everything together for about 1-2 minutes.
  3. Add sauce into the wok. Constantly mix for about 1-2 minutes.
  4. Add 1 tbsp sesame oil to boost flavour. At the very end, and 2 tsps of oil to finish.
  5. Plate and enjoy!
